Idyllically poised beside the ocean on the edge of KIMPTON Kitalay Samui, the paradisial resort’s signature restaurant is a luxurious living room open to the spectacular shoreline.
Specialising in Seafood & Fish, each dish created by Executive Chef Jacobo Astray, formerly of the one-time world’s best restaurant, “El Bulli,” and his own much decorated restaurant in Bangkok, “Broken Eggs”.
Designed for comfort and fun dining, the Fish House invites guests into a polished retreat for an interactive adventure. Surrounded by the winds of the sea, with its dark, reclaimed wood from the local environment and sea-going craft, beachside dining experiences were never more elevating.
Not surprisingly, the menu is mainly seafood and fish dishes, from classics to modern. The wisp and lull of the ocean’s breezes lifts the smell of garlic and butter prawns into the air.
Chef Jacobo’s paellas are exceptionally palatable. Not least “Black Paella” featuring squid ink rice cooked in a paella pan, served with grilled squid, fried piparras peppers and ali-oli. Other divine dishes include grilled octopus, rosemary confit, Spanish paprika. Not to mention, “Gambas Ajillo,” featuring local prawns with garlic, finely chopped parsley, and chili. Yet other key plates include Curry Crab Roll, Sea Bass Ceviche, and Char-Grilled Pineapple Sundae.
Many of Chef Jacobo’s pristine garden and vegetable delights are grown in the resort’s own garden.
As for beverages, several spirits behind the bar are Eco-Spirits, part of a “Closed Loop System” that helps reduce the resort’s carbon footprint and bottle waste. Creative cocktails include “Tides & Waves” with mescal and “Anticipated Journey” with Japanese whisky-infused seaweed. Classic cocktails range from “Orange Maple Penicillin” to “Strawberry Salty Dog”.
The boutique wine list features many organic, biodynamic, and orange wines. An impressive selection of pitchers is offered.
Pre-sunset high tea comes with choices of rosé, sparkling wines and sweet and savoury dainties. ‘Spirt and Cocktail Tableside Trolleys are wheeled around the bar and restaurant nightly.
Last not least, playlists are curated by USA powerhouse “Playlist Generation”, including Italian disco, Brazilian tropicalia, French pop and Afro, completing the chic ambiance of the inimitable Fish House.
